Danger Close Buffalo Cauliflower
We got your back vegans! Even in a room of meat eaters these things disappear fast. Considering they’re a guilt free, low calorie and keto-friendly snack, we highly advise making more than you think you’ll need. Just increase the below recipe per head of cauliflower.
INGREDIENTS
1 head of cauliflower
Danger Close Hot Sauce
3/4 cup all-purpose flour
3/4 cup milk (or your vegan milk of choice)
1 teaspoon smoked paprika
2 teaspoons garlic powder
1 teaspoon onion powder
1 teaspoon salt
Fresh cracked black pepper
2 tablespoons vegetable oil
1 tablespoon BBQ sauce (or Maple Mayhem!)
Half stick of butter
DIRECTIONS
Preheat the oven to 450 degrees and combine the salt, garlic powder, onion powder, smoked paprika, and black pepper in a bowl along with the flour and a splash of Danger Close. Whisk in the milk until your slurry/batter is completely mixed.

Break apart your cauliflower into whatever sized bites you prefer and dip them in the batter. Allow the excess to drip off and lay them on a baking sheet. Bake for 10 minutes, flip, and bake for another 10 minutes.

While the cauliflower is roasting, add the butter, Danger Close, and preferably the Maple Mayhem (we’ll let you slide with BBQ sauce, honey, or maple syrup if you don’t have any) in a saucepan. Bring it to a low simmer while stirring over medium heat.

Pull your now baked bites out of the oven and brush on a heavy coat of the above sauce. Bake them again until you start to see some browning around the edges, or if you want them extra crispy, throw them under the broiler for a couple of minutes, but don’t go anywhere. That broiler will burn those suckers faster than an M240 going cyclic. (It’s a machine gun, shoots a lot of bullets, gets hot, you have to change the barrels so they don’t burn up/melt, yada yada yada. Cyclic just means super-duper fast.)

Serve hot with homemade Bleu cheese dressing, and don’t you even think about using ranch!
